Vegetarian BBQ delights

Summer is here and soon will be gone- so get out to your BBQ and enjoy the sun!

As a vegetarian, I never knew the wonders of the BBQ until this year. Now I’m a weekly user and I’m so glad I indulge in the charcoal flavor that comes with the BBQ. Try these easy sides to jazz up your next summer meal.

BBQ’d Vegetables

Slice into large chunks zucchini, mushrooms and sweet peppers and marinate in 2 Tbsp olive oil, 2 Tbsp balsamic vinegar and 1 tsp dry mustard for 15 min-1 hour. Place veggies on grill and turn when the they start to ’sweat’ (water will start to accumulate on the tops). Grill for another few minutes, allowing sides to slightly blacken. Pour extra marinade over the veggies while cooking, allowing the flames to bathe the food with flavor. Serve immediately and enjoy!

BBQ’d Asparagus

Place asparagus on the grill and pour balsamic vinegar over the vegetables. Turn when one side slightly blackens, and crumble feta or goat cheese over the spears. Drizzle more balsamic vinegar over the grill, causing the flames to touch the spears. Serve immediately. This pairs well with most meats, including salmon or steak.

BBQ’d Pears

Slice pears in half, and core. Grill ‘face down’ for ~2min and flip when grill marks appear on the pear flesh. Place feta cheese and nuts in the core and grill for another 2 min. Remove from grill and enjoy immediately… the center is soft and warm and the grill matches nicely with the cheese.

Man BBQ veggies are the best. There is so much you can do with them, and so many techniques you can us. Doing mushrooms are the best, especiallly if you know how to do them. Vadalla Onions are simple killer when BBQ, and cherry tomatoes,… oh god,… better than sex is done right

As a life long Vegetarian and outdoorsman I know only too well the dificulties of joining the BBQ crowd, most of the store bought vegieburgers are tateless and expensive and many cannot be directly grilled. We have developed our own and after many years of experimentation finaly have a realy good recipe.

Mmmm your veggie burgers look fantastic. I've never though of cauliflower in the mix! I also checked out your nut roast… it's similar to a meat substitute I make when I want 'no-meat balls' for spaghetti or I form them into patties and grill them in a frying pan for veggie burgers. When I do that post, I'll be sure to link to your recipe page. I can't wait to try some of these other creations out.
